At the slightest hint of cooler weather, I find myself craving soup.

Does anyone else do this?

It’s like my body goes, “OK sweet cheeks, winter’s here. Time to get stuck into some warm, delicious, comforting food. Soup all day, errday!”

The temperature has taken a bit of a dip in my hometown of Adelaide this week, so I figured it was the perfect time to round up some fantastic soup recipes.

Some I’ve already made and some I’m yet to try, but all look (and I’m sure taste) amazing.

1. Chicken Soup
We may as well start with a classic, right?! This is a chicken soup recipe I adapted from the Taste website. It’s a hearty, delicious and flavoursome chicken soup which fed the 2 of us and also provided each of us with leftovers for lunch the next day.

2. Four Ingredient Roasted Cauliflower Soup
The humble cauliflower is having its moment in the sun right now. A resurgence in popularity has seen it take on many forms in many different recipes {cauliflower rice, anyone?} but if you ask me, you just can’t beat it in a soup. This recipe features only 4 ingredients, but produces a creamy, salty and hearty soup.

3. Beef, Vegetable and Barley Soup
Perfect for a cold winter’s night, this soup would make a great fuss-free dinner. It not only gives you your red meat fix, but also features plenty of veggies too. The type of soup you get started on a Sunday afternoon and let it bubble away on the stovetop, allowing those delicious, robust flavours to really develop.

4. Mini Minestrone
I do love a good minestrone soup. It’s always been a favourite of mine. This particular recipe is simple and healthy, and the pasta can easily be swapped out for a gluten free alternative if you’re so inclined (which I am). You just can’t beat the smell of garlic and onion sizzling away, can you? Yum!

5. Roast Pumpkin Soup
Yet another classic, there must be a gazillion pumpkin soup recipes in the world. Give or take. And I’ll take it! Especially when it features roast pumpkin. This recipe also features instructions for making it in your Thermomix and could easily be made vegetarian by swapping out the chicken stock for veggie stock.

6. Broccoli and Chicken Soup
This soup features only 3 ingredients, making it incredibly simple yet totally nourishing. Broccoli happens to be my favourite vegetable, so you can be sure I’ll be making this numerous times this winter. The perfect recipe to whip up for lunch on the weekend when you’re craving something quick and tasty.

7. Lentil, Sweet Potato and Pancetta Soup
Did you know lentils are low in fat? True story! They are also very versatile – perfect for salads, soups and sides. Packed full of vegies, this hearty lentil soup wins for taste and budget. It’s also quick to prepare, which is always a winner in my books.

8. Potato and Leek Soup
This potato and leek soup is a delicious winter warmer and easy weeknight meal. Creamy, hearty and filling. What more could you ask for… besides a second helping?!

9. Tomato and Bean Soup
Ahh, a soup that doesn’t just feel like a soup, but more like a meal. We like those types of soups, don’t we? This recipe features crushed tomatoes, beans, leek, carrot and pancetta. For our vegetarian friends, simply omit the pancetta and swap the chicken stock for a veggie one.

10. Beef Pho
No one really knows how to pronounce “pho” exactly, but we all know just how much we love it! A traditional Vietnamese noodle soup that’s become incredibly popular in recent years, now is the perfect time to try making it at home yourself.

    Sonia, you are going to love this carrot and Fennel soup! I’d never heard of it but tried it in a cafe and loved it. I searched for the recipe and found a Jamie Oliver recipe online and made it at home. It’s delish…..

    I’m a big fan of the pho! We eat soup every Sunday night during Autumn/Winter – some of our favourite include, pumpkin soup, potato, leak and bacon soup, roasted red capscium soup and chicken soup. Love that there are some new soups on your list for us to try 🙂
